The farmer's markets are bursting at the seams and our home gardens runneth over - I literally have a volunteer single squash plant that has taken over an entire 20 x 50 foot greenhouse all by itself. Check out the harvest from my (Robin) veggie garden this week!

Luckily we love to make recipes that use all of our fresh vegetable bounty when in season. And we often make double and freeze some to eat in the dead of winter. Bringing some summer joy back on to our tables!

Low FODMAP Lemon Zucchini Bread

Low FODMAP Lemon Zucchini Bread can be prepared in the time to takes to preheat the oven. Grated zucchini and lots of very finely grated lemon zest are combined with basic quick bread ingredients like eggs, sugar, oil and our favorite low FODMAP gluten-free flour blend.


Loaded Low FODMAP Kale Chips

Our Loaded Low FODMAP Kale Chips, which are easier to make than you think, are flavor-packed with nutritional yeast, which makes them “cheesy”, low FODMAP garlic and onion flavor, and a hint of chile and salt.

Now you don’t have to buy expensive kale chips with dull flavors. Once you make these you will be emboldened to try our additional flavor combos.

Low FODMAP Ratatouille

Low FODMAP Ratatouille (rat-tuh-TOO-ee) is based on the classic late-summer vegetable stew featuring eggplant, zucchini and red bell peppers.

Our version uses scallion greens instead of onions and uses the oven to roast the vegetables with olive oil, which concentrates the vegetable’s flavors.

Then the veggies are combined with fresh tomatoes on top of the stove and cooked until soft, silky and rich. Flavored with thyme, rosemary and low FODMAP garlic, this vegan dish is incredibly versatile.
